This high phenolic extra virgin olive oil has been successfully produced and is available once again. Produced from the ancient olive tree varieties that cover the countryside and mountains all over Greece and Cyprus. This revival began when EFSA (European Food Safety Authority) approved the health claim labelling regulation for polyphenols on the label of EVOO – EU 432/2012
It has been discovered, studied and produced on the same principles of curiosity, observation and innovation that fueled the rapid advancement of ancient Hellenic culture of excellence. Dr. Prokopios Magiatis and Dr Eleni Melliou working under the most stressful conditions in Greece at the Univ. of Athens along with the tireless dedication of a team of researchers discovered in 2012 the Nuclear Magnetic Resonance (NMR) method of measuring each phenolic compound in olive oil. This created the opportunity to determine which phenolic compounds are the most health promoting and health protective. Transparency has finally arrived in the olive oil industry. They have also invented the handheld Aristoleo Test Kit the lab-in-a-vial to measure the phenolic content of EVOO in minutes. Another achievement is the Aristometro – a portable spectrometer able to quickly and accurately analyze the combined concentration of Oleocanthal and Oleacein in extra virgin olive oil as part of the ARISTOIL Interred MED programme
ARISTOIL is a 3 year 5 country study (Greece, Cyprus, Croatia, Spain and Italy involving over 3,000 olive growers and communities) to increase the competitiveness of the MED olive oil sector by studying the best olive grove management, and agronomic factors affecting olive oil quality in order to produce extra virgin olive oils that conform and exceed the EU 432/2012 health claim requirements for polyphenols.

The latest invention is the Olive Predictor which won first prize at the Olive Challenge held in Athens March 11 2018. Now we can analyze the phenolic content of a handful of olives using a portable olive mill, the Aristoleo Test kit and the Aristometro. This will expand the ability of the olive growers to choose the best time to harvest the olives and produce the highest phenolic EVOO possible.
The Atsas organic farm and many others in Cyprus and Greece have broken with tradition and have embraced the true nature and unlocked the secret to producing this “medicinal” (in the Hippocratic sense) high phenolic EVOO. Oleocanthal rich olive oil has been the subject of intense research and the darling of scientific study for the last 5 years. The results so far are extremely positive and we look forward to receiving the results of 4 humans trial studies in progress examining the effect of regular consumption of high oleocanthal EVOO on Alzheimer, stroke prevention, lowering cholesterol and the effect on patients diagnosed with cancer but have not started chemotherapy treatment yet.
