For over 3,000 years, olive oil has been associated with healing. Ancient physicians described its use for pain relief, cardiovascular strength, skin conditions, digestive balance, and overall vitality. For centuries, however, these benefits were largely anecdotal.

That changed in 2012.

The European Union formally adopted EU Regulation 432/2012, a labelling health claim based on more than a decade of research and multi-country clinical trials. The claim states:

Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.

This regulation was transformative because it identified olive oil polyphenol derivatives (bio-phenols) as the key contributors to this protective effect — not simply the monounsaturated fat content.

Researchers further observed that the reduction in LDL oxidation was dose-dependent, meaning the concentration of bio-phenols matters. The minimum level required to carry the health claim is 250 mg/kg of polyphenol derivatives. Today, certain early-harvest High-Phenolic Extra Virgin Olive Oils (HP-EVOO) exceed 1000 mg/kg.

The Measurement Breakthrough

A major advancement came from the research team led by Dr. Prokopios Magiatis at the National and Kapodistrian University of Athens, who developed a quantitative Nuclear Magnetic Resonance (qNMR) method capable of measuring individual olive oil bio-phenols with precision.

Their analysis of thousands of samples across Greece, Cyprus, Italy, Croatia, Slovenia, Spain, and the United States confirmed what ancient physicians such as Hippocrates and Dioscorides suggested:

Oils produced from early-harvest green olives contain significantly higher concentrations of bio-phenol derivatives.

As olives ripen, these compounds diminish.

The Emergence of High-Phenolic EVOO

While Extra Virgin Olive Oil represents a small percentage of global olive oil production, only a fraction of that meets high phenolic thresholds. The broader industrial olive oil market has historically emphasized fat composition rather than phenolic content.

The EU health claim created transparency. It empowered small independent producers to focus on measurable phenolic concentration and validated a new category: High-Phenolic EVOO.

Preliminary and ongoing clinical research has explored potential implications for:

Further large-scale, multi-centre clinical trials are required to expand official health claims. Because olive oil cannot be patented, funding for extensive pharmaceutical-style trials remains limited.

First of all the official health claims for olive oil are few and far in between. But there is one aspect of olive oil that is gathering a great deal of attention. The polyphenols in fresh olive oil made from green unripened olives. They are called phenolic compounds and they are being investigated not only for alleviating symptoms but even as treaments for a variety of diseases and conditions.

The phenolic compounds are sensitive to light, oxygen and heat. They can deteriorate more rapidly if not kept in below 16°C. Temperatures in warehouses, trucks and retail outlets can soar well above 25°C.
