Laconiko Family. Dino and Diamantis wives and children

There’s a warehouse in Manassas, Virginia where you need a jacket.

Not because the heating broke. Not because the brothers who run it forgot to pay the bill. Because Diamantis and Dino Pierrakos made a discovery — the kind that changes everything — and once they knew, they could not unknow it.

It started at the NYIOOC. Competing year after year, winning with a consistency that defies the odds, they noticed something about the way the judges handled the samples. The oils were kept below 59°F before evaluation. A detail most producers would file away and forget.

Diamantis and Dino are not most producers.

They went looking for the reason. And they found it in the science — the same science that underpins everything Aristoleo has built its certification standard on. Active biophenols are volatile. Heat is their enemy. A warehouse kept at ambient summer temperature is slowly, quietly, imperceptibly diminishing the very compounds that make a high phenolic extra virgin olive oil worth its certification.

This matters most for high phenolic extra virgin olive oil. The higher the active biophenol content at certification, the more there is to lose.

Studies from Spain, Italy and Greece consistently confirm the same finding: active biophenol degradation accelerates significantly above 15°C – 59°F, and the health claim itself has an expiration date that temperature controls.

Most producers consider 18°C — 65°F — adequate storage temperature. It is the accepted norm. Aristoleo is working to move that needle. What Laconiko did instinctively, ahead of any requirement, is where we believe the standard must go.

So they changed the warehouse. They wear jackets now. Every day. In and out of the cold, year-round, because that is what the oil requires.

This is not corporate social conscience. It is not a marketing decision. It is not a box to tick on a sustainability report.

In Greek there is a word for it: philotimo. It translates, inadequately, as love of honour. But it means something deeper — an internal obligation to do right, not because someone is watching, but because you know. Because once you know, you are accountable to that knowledge. It is, as any Greek will tell you, the highest expression of character. And as anyone who has spent time among Greeks will quietly admit — it is rarer than it should be.

Laconiko carries it in full measure.

The Pierrakos family — Diamantis and Dino and their wives Katerina and Christina, present at every celebration and event when children allow, supported by their mother and sisters — built this business in honour of their father, from a grove in Laconia, Greece, to a warehouse in Virginia that has won more international awards than most producers accumulate in a generation. Over 370 awards across Athens, Los Angeles, New York, Japan, and beyond. Named Best Olive Oil in Greece at the 2025 Athena International Olive Oil Competition. Most recently, winners at the very first World Best Healthy EVOO Contest in Malaga.

They entered that competition in their first year. They won.

That is what philotimo looks like in practice.

Aristoleo does not certify facilities. We certify oils — verifying active biophenol content through qNMR analysis, holding every oil to the EU health claim standard and beyond. But certification means nothing if the oil that earned it arrives diminished. The CoolChain™ is not a luxury. It is the point.

Laconiko understood this before we asked them to. That is why Laconiko is the only Aristoleo Certified facility in the United States.

They were also the first Aristoleo Retail Cooler installation in the United States — in Manassas, Virginia. Not New York. Not Los Angeles. Manassas. That is what it looks like when a family decides to take the science seriously from the very beginning.

They put on their jackets. Every day.

That is the standard.
