Health Benefits of Polyphenols in Olive Oil

There are hundreds of health claims made for olive oil in the last 3,000 years. Pain relief, anti bacterial, lowers blood pressure, lowers blood sugar, strengthens the heart, anti cancer, performance enhancing, fights Alzheimer, skin diseases, stomach problems, toothaches, and too many to list all the claims made through the ages for the healing properties of olive oil.

What is the actual evidence for any of these claims?

First of all the official health claims for olive oil are few and far in between. But there is one aspect of olive oil that is gathering a great deal of attention. The polyphenols in fresh olive oiil made for green unripened olives. They are called phenolic compounds and they are being investigated not only for alleviating symptoms but even as treaments for a variety of diseases and conditions.

The phenolic compounds are sensitive to light, oxygen and heat. They can deteriorate more rapidly if not kept in below 16°C. Temperatures in warehouses, trucks and retail outlets can soar well above 25°C.
