It all started when the EU 432/2012 Health Claim Labelling Regulation was approved for polyphenols in extra virgin olive oil (EVOO). This created another distinct category of EVOO with a health claim or High Phenolic EVOO. The minimum required concentration of polyphenols to qualify was set at: 250mg of polyphenols per kg of EVOO.

EU Health Claim stated: “Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress”.  What it means in plain language is that polyphenols in EVOO contribute to the reduction of bad cholesterol. (1)

Following a number of successful clinical trials initiated by Dr. Prokopios Magiatis from Greece in the USA, Cyprus, and Spain, the value of High Phenolic EVOO has increased but there is a cost to produce it and a cost to protect it.

High Phenolic EVOOs are produced from early harvested green, unripened olives. High Phenolic EVOOs are in demand with health conscious and discerning individuals looking, not only for taste but, more critically for its exceptional health benefits. (2)

Now science has shown definitively how temperature effects the quality of olive oil. Even after bottling, High Phenolic EVOO may lose an average 46% of its phenolic content over 12 months when stored at room temperature. (3)

The EU 432-2012 regulation came into effect the same month that Dr. Prokopios Magiatis announced the development of a new, fast and accurate method of measuring quantitatively all the phenolic compounds in EVOO. The development of the qNMR method marks the major turning point for the olive oil industry. Together with the health claim, it has helped shift the focus from placing the emphasis on taste and acidity levels to the concentration of polyphenols and their enhanced health benefits.

Following  7 successful clinical trials, the demand for High phenolic EVOO is increasing. This prompted Aristoleo to take action to  protect phenolic compounds in EVOO from oxidation caused by fluctuating temperatures. This type of EVOO requires a greater concentraion of olives per liter of olive oil. It can take up to 10 times more olives to make one liter of High Hhenolic EVOO than ordinary Extra Virgin Olive Oil. This is the reason for the high cost and the need to protect it.

HP EVOO is gaining recognition as a wellness supplement or even  a therapeutic agent. This is due to the high level of phenolic compounds found in early harvest EVOOs from specific varieties of olive trees. Recent clinical trials have indicated the “medicinal” effect may be possible with the consumption of a minimum 20mg of polyphenol-rich olive oil per day.

The olive oil industry has known for over 3,000 years that olive oil needs to be stored in a cooled environment in order to maintain the quality. Underground cellars seen in ancient ruins where giant olive oil filled amphorae were buried in the earth maintained temperatures  below 16°C or 60°F
